The secret to this one is the combination of full-fat coconut cream, which is so high in saturated fat that it barely freezes at all compared to water-based alternatives, and pasture-raised egg yolks, which act as a natural emulsifier and prevent the large ice crystals that make homemade frozen desserts grainy.

The result is a scoop that is genuinely creamy — rich and dense in the way that premium ice cream should be. And every ingredient has been chosen for its low deuterium content. No dairy, no sugar, no water added. Just the ingredients that belong.

Ingredients

  • 2 x 400ml tins full-fat coconut cream, chilled overnight
  • 4 pasture-raised egg yolks
  • 4 tbsp erythritol or monk fruit sweetener
  • 2 tsp pure vanilla extract, or 1 vanilla bean, scraped
  • Pinch of fine sea salt
  • To serve: cacao nibs, toasted coconut flakes, or a drizzle of melted 85% dark chocolate (optional)

Method

  1. Prepare the coconut cream. Open the chilled tins of coconut cream. Scoop the solid cream into a medium saucepan, discarding the liquid. You want the solid fat only.
  2. Warm the cream. Heat the coconut cream over medium-low heat, stirring gently, until warm and smooth but not boiling. About 3–4 minutes.
  3. Temper the egg yolks. Whisk the egg yolks, erythritol, vanilla, and sea salt together in a bowl until slightly pale. Slowly pour about a third of the warm coconut cream into the egg mixture, whisking constantly. Then pour the egg mixture back into the saucepan with the remaining coconut cream.
  4. Cook the custard. Return to medium-low heat and stir constantly for 4–5 minutes, until the mixture thickens slightly and coats the back of a spoon. Do not let it boil. Remove from heat.
  5. Cool completely. Pour into a clean bowl and allow to cool to room temperature, then refrigerate for at least 1 hour until completely cold.
  6. Freeze. Pour into a shallow freezer-safe container and freeze for 1 hour. Remove and stir vigorously with a fork, breaking up any ice crystals at the edges. Return to the freezer and repeat once more after another hour. Then freeze for a final 2–4 hours until firm.
  7. Serve. Remove from the freezer 5–10 minutes before serving to soften slightly. Scoop into bowls and top with cacao nibs, toasted coconut flakes, or a drizzle of melted 85% dark chocolate.

A note on eggs

This is an egg custard base, so cook it properly. Stir over low heat until it thickens enough to coat the back of a spoon, then cool it quickly and refrigerate. Use fresh, refrigerated eggs and do not leave the cooled custard sitting at room temperature. Lightly cooked egg can carry a risk of foodborne illness, which matters most for pregnant women, infants, older people and anyone who is immunocompromised.
